Well, we are going to take dinner to a couple from our church, one of whom had some back surgery.   Sous vide salmon with dill sauce most likely for the main.    Rice might be good for a side, only I need to jazz it up some.   Pilaf maybe.  Or maybe make farro.   Or some of that manoomen from nett lake.

Want to pass this along from the new 2017 Old Farmers Almanac I picked up the other day. Can't wait to try it.

Chicken, apple-cheese casserole


INGREDIENTS
5 tablespoons butter or margarine, softened
3 medium-size apples, halved, cored, and sliced (3 cups)
2 large onions, thinly sliced (2 cups)
3 whole chicken breasts, boned, skinned, and split
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1/2 teaspoon dried thyme
2 tablespoons brandy or apple cider

INSTRUCTIONS
Preheat the oven to 350 degrees F. Coat a 2-quart baking dish with 1 tablespoon of the butter.
Melt the remaining 4 tablespoons butter in a large heavy skillet over medium heat. Add the apples and onions and saute until the apples are tender, about 10 minutes. Spoon into the baking dish.
Rub the chicken with the salt and pepper and arrange over the apple-onion mixture. Combine the cheeses with the bread crumbs and thyme and sprinkle the mixture over the chicken. Drizzle the brandy over the cheese. Bake for 35 minutes or until the cheese is golden brown and the chicken is done.

I'll trade ya!!!  Not a biggie; came up wid this about three years ago. Should be selling it at the State Fair, but some noob came up with casserole on a stick....  :angry: Long story, but there is ONE (and only one) decent Hamburger Helper casserole out there...crunchy taco. Yer basic cooked burger with mexican seasonings and rice;cooked,  then topped with square corn chips, and covered in cheddar cheese sauce on top of those. I just add some chopped onions and cilantro and cumin to the meat. So anywho, ya end up with a very thick casserole in glass dish, topped with the chips and melted cheddar sauce. As I was eating it, thought  Hey....! Why not? So I took what was on me plate, plopped it in a flour tortilla, then a blop of sour cream, and rolled it up. Off I went. The portable hotdish. Don't laugh until ya try it.

I plan on cutting the chicken recipe one in half and giving it a whirl soon....the Hamburger Whelper, which I NEVER buy, was all on sale for .75 a box, so I bought a few of the crunchy taco ones. Used my sale priced hamburger that was $2.25 lb, so I get two good meals for a total of $3!  Things like that help me manage to budget my funds.
