Not really stove, oven, crock pot or grill. But off to the dehydrator. AND no backstraps were harmed in this process.

Ok food junkies, got a question. Took out a pork loin. I am going to split it and put some garlic, oniun and rub it up with some of Reb's rub all over it. Let it sit overnight in the frig and Sunday throw it on the charcoal grill. My question is, it has what I believe you guys have a fat cap on it. Do I cut that off? Grill it with the cap up of down?

Loin, not Tenderloin, right?   I would do fat up, and don't overcook it.   (actually I would sous vide it, to 140 or 145 and then sear on the grill or in the oven but that is a different story)

Or slice it into chops. and cook it that way

Yeah Del it's one of them Hormel loins. Glenn had grilled a many of these so I got the don't over cook down pat. Most of my meat gets grilled.

And thank for the advice on the fat cap!; :happy1: :happy1: kinda what I was thinking.

Ya that's not much of a fat cap anyway. Been a long time since I've split one seasoned the snot otta and tied back up to grill, sounds good glenn!

Careful with the salt, since those hormel "always tender " already have some from the injections.

Careful with the salt, since those hormel "always tender " already have some from the injections.

Those are SWIMMIMG in salt.....I can't even eat 'em, they gag me, so much salt. I'd suggest washing them off first..in the washing machine!

Morning Rebs.  A friend of mine once split one and inside put onions, olives, mushrooms, green peppers etc and then tied it up and grilled it on indirect heat.  Sliced it in thick slices so we each got lots of the stuff and it was awesome.  What Glenn not catsup???  lol

Well we made some Curleys Ring Bologna and tried it for the first time last night.  Turned out great.  It was fresh not smoked so I simmered it in water for awhile till it was done.  Then I had some bacon grease left in my cast iron pan so heated that up whilst having a cocktail and was going to put a brown on the sausage.  Well I had the heat up a little high and the wife had just turned it down some and I put that ring bologna in the hot pan and the casing absolutely split right up and it looked like it skinned itself in half a second.  It was like an optical illusion.  The skin was at the ends of the sausage, peeled back as nice as could be.  We looked at each other and burst out laughing.  It was awesome.   :rotflmao: :rotflmao:

Ya we do have fun...   Today it is corned beef, cabbage, and carrots.  We love cabbage so will cook the whole cabbage instead of spuds.  Not sure if I will cook the beef in the oven by itself or do it in the crockpot.  Like it both ways.

Try one of the #1 Irish dishes...Colcannon. Mashed taters with butter and cooked cabbage blended, then baked...no one ever has it around this one-horse town.
