hey HD what kind of meatballs you use??? i havent found a good meatball i like, simeks comes closest and i prefer an italian flavor!

These are the ones that we like the best, and they're cheaper than Simeks. We get the Italian ones too.....

Hey my jalopenos are turning red.  Is that ok?  Never had it happen before but I am letting them get bigger this year.  Had one last night and it is hot.  A green one I mean.

Yup. They'll get sweeter as they turn red, and back down in heat a bit. I usually let half of mine go red like that.

Taco bake potato casserole....
Take some taters (4 large tators), coat them with olive oil and salt, poke holes in them with a fork. Place them on a cookie sheet. Preheat the oven to 425, place the taters in the oven for 45 minutes.
Chop up 2 red bell peppers and one or two yellow onions (depending on size, around 2 cups) cook them in a pan with olive oil till the onions become translucent. I add some ruff chopped mushrooms at this point, and cover.

I have used leftover chicken (chopped) or browned hamburger (precooked) add to the pot with a can of black beans along with the water from the can(15 oz.). Then add a can of tomato sauce along with a package of your favorite taco seasoning, and simmer.

Once the potatoes are baked, cut in half and place in the bottom of a aluminum casserole pan, smashing them to break um up a little. Spoon your filling over the potatoes. Cover with 3 cheese taco blend and put in the oven till the cheese melts on top.

Serve with top the tater sour cream or guacamole....or whatever you like with tacos.

I have not tried these myself, but they we featured on Twin Cities live as the best frozen meat balls
