Picked up 25 pounds of pork loin for $0.99/lb so I made a couple of dishes for the week. 1st is a baked ziti with pork medallions, homemade sauce and 2nd, pork chops with a mushroom cream sauce with mashed taters, garlic butter and broccoli.

Very simple... I boiled the pasta( you can use either ziti or rigatoni) for ten minutes which is very al dente and drained. I cut the pork loin about 1/4” thick and quartered each loin chop then browned. Mix together the pasta, sauce (which was homemade or use your favorite jar sauce) and pork medallions, sprinkle a light layer of parmigiana cheese on top then a good layer of shredded mozzarella on top of that. Cover with foil and bake at 375 for 30 to 40 minutes. I found out that if you get a ball of mozzarella and shred it yourself it melts/tastes better than a bag of pre shredded cheese.

I am cooking a corned beef point today just to make Ruebens with tonight.  I will cook it this morning then cool it in the fridge so it will cut easier tonight.  I'm going to buy some flats on sale today at the store.  Worked great.  I bought 4 nice ones today on sale.  That should last a long time.

   It was "ok" , I scarfed it down the wif thought it was tasteless..lol. It's been along time since we did one, but it seemed last time the corned beef was saltier than this one.. :scratch:

Whelp, for lunch a buddy and I hit our friends pub for a great Reuben on marble rye. I blame you guys talking about them on here for that.  :smiley:
For supper, spaghetini with some terrific cheddar polish from a pro snauasge maker... :whistling:
Shoulda used some garlic toast to round it out, but had to eat quick, as I got way behind in some legal stuff that took me past my dinner time.....tummy can't wait. :tongue:
