Took one of those boneless pork loins and butterflye'd it like it's supposed to be.  Put a spinach stuffing in it and tied it up.  Put it in the smoker at 275 and gave it some apple wood chips.  Got it up to 125 internal but time was running out.  So it's in the oven now at 350 to finish it up.  Here it is so far.  good luck.
