I havnt canned for the long haul , eggs, fish and cukes I'll gobble up perty fast so I havnt replaced lids in a while. Boil everything up before I use, I don't know maybe I'm doing it wrong.  :confused:

Gee whiz,  what you guys do with all your tomatoes.  I only have four plants but they are stacking up on the counter.  4 jars of salsa in the fridge and been doing blt's weekly. Anybody make there own spaghetti sauce?

When I do up salsa I do 13_14 pints. Takes a bushel of mater's.

We did not go golfing today.  We got our 42 lbs of pickles and our garlic.  We did 41 qts of pickles.  Some sliced, most regular, and some jalapeno.  Can't wait to try them.  Having a brewski patting ourselves on the back.  Got a steak seasoned waiting for the grill.

I kinda helped do sqeeti sauce once. Whet I remember of it ya cook the crap outta da mater's and add all kinds of chopped herbs??

So Glenn you mentioned once that you were surprised that I only had the nords in salt water for 24 hours in the pickling process..  I have always wondered if they are better when in longer as you must be doing?

My dad's receipe and a few others have it in salt water for 48 hours.

 The receipe I use now says put in vinegar and pickling SALT for 5 days.

We do. And it takes a lot of maters!!!!! 40lbs only makes about 6-7 quarts. You have to cook for a long time on low heat to reduce the liquid out of the maters. If you don't it will not be thick. It's taken several years to perfect the recipe....but man is it good!
