Reb's Reuben Dip

You can make it three ways, and it's really easy.

1 (8 ounce package) cream cheese, room temp
8 ounces deli corned beef coarsely chopped (I use Carl Budding pks)
1 big cup Swiss cheese, coarse shredded
1/2 cup good sauerkraut, drained well
1/4 cup sour cream (NOT lite!)
1/4 cup Thousand Island salad dressing
1/4 tsp caraway seeds (optional, but I like them)
Sprinkle of salt
Triscuit crackers or rye rounds , for serving

To make it in the oven, preheat oven to 400 degrees. Coat a pie plate or oven-safe shallow bowl with nonstick spray.
In a large bowl, combine cream cheese, corned beef, Swiss cheese, sauerkraut, sour cream, salt, seeds,and dressing;  slowly mix well. Spread into prepared pie plate and bake until hot and bubbly, about 15 to 20 minutes. Serve with crackers or chips.

To make it on the stove, combine cream cheese, corned beef, Swiss cheese, sauerkraut, sour cream, and dressing in a saucepan over medium heat. Cook until heated through, stirring occasionally. Put in glass bowl. Serve with crackers or chips.

To make it in a crock pot, combine cream cheese, corned beef, Swiss cheese, sauerkraut, sour cream, and dressing in a slow cooker. Heat on HIGH for 2 to 3 hours or LOW for 4 to 6 hours. Serve with crackers or chips.

Reuben casserole

6 slices of rye bread, cubed
1 pound deli sliced corned beef, cut into strips...  (I cooked a corned beef roast and use that and cube it too)
2 cups shredded swiss cheese
16oz sauerkraut drained and rinsed
3/4 to a cup of Russian or 1000 Island dressing.  we 1000 cause we couldn't find Russian

Directions:
preheat oven too 400.  Spread bread cubes in a 9 by 13 baking dish.. Spread sauerkraut over the bread cubes.. Place beef over the sauerkraut.  Pour dressing over all. Spray foil with cooking spray and bake 20 minutes covered with sprayed side down. remove foil and sprinkle the swiss cheese all over and bake 10 more minutes uncovered, until the cheese melts..
