Decided to make 5 lbs of jerky today. I don’t like to smoke my jerky, so I marinate it and dehydrate it. Also cold smoked some cheddar cheese, and a 1/2 dozen eggs for smoked deviled eggs.

That looks great!  Did you do it in a dehydrator or in an oven?

In the dehydrator about 10 hours or until it cracks when you bend it.
I like the dehydrator better than the smoke because it doesn’t take much to over smoke jerky. If you want you can add a little liquid smoke.

Yep, I use the dehydrate feature of the convection oven and a dash of liquid smoke in the marinade.  It cuts the dehydrate time down to a few hours (AND makes the kitchen smell manly).

One other important thing to remember is to keep the temperature at or above 140 degree while dehydrating for that long of time.

the very first time i made jerky via the dehydrator it didnt turn out to good. lets just say it got away overdone for my liking. i used the LEM backwoods hickory flavor seasoning. i put it on the dehydrator before i went ni-nite and let it run all nite. by morning it was pretty crispy.

now i put it on in the morning and watch it throughout the day, take some off and rotate as needed.
