What is it????

The soup in the crockpot was a compilation of things I saved for a day exactly like this one. Leg of lamb bones I froze after a grilling session for July 4th & 6 leftover chops from a grilling session in Canada later that month. I figured the latter had been eaten but when Billy & I cleaned out the cabin freezer back in October, they were still there. A dear Canadian friend sent some frozen lamb & wild rice soup home with me a few years back made with the leg leftovers from another one of our grilling sessions. It thawed me out after a sub-zero day of helping the well guys work on that project a month or so later. Rest of the ingredients included 2 cups carrots, 2 cups celery, 1 cup onion, 1 cup rutabeggar, basil, oregano, salt, 2 qts. of beef broth from bullion cubes, and 1 cup wild rice. Based from a Betty Crocker recipe I improvised off of. Cooked on low from 11:30 - 4:30, then turned down to warm so the veggies didn't turn to mush. Same results. After chores, coming in the house cold & that smell made you just want to devour it. A couple bowls later, was thawed out & warm from head to toe. Good stuff, Maynard.  :happy1:

Sounds really good......but I don't eat lamb. Would probably have to substitute a ham bone from Christmas. :happy1:

Actually the recipe I used called for turkey so it's got flexibility, one of the reasons I went with it. Good lamb is hard to come by & it's expensive. Big difference between breeds & how they're raised too. Too many have had a bad experience. I've eaten lamb all my life so raising our own at least we know what we've got.

Did you add the wild rice right away? I always pre cook rice or it absorbs all the liquid.

I did as that's what the recipe called for. It absorbed a fair amount of the broth but there were 2 qts. of broth in it & only a cup of wild rice. I don't make a lot of soup so the path of least resistance is the route I took. There was room so I could've added another qt. of broth if I wanted it more liquid. Then we'd be freezing some which is OK too. As it is, it had enough meat in it so it was like a meal. When I made something like this a few years ago with leg bones, beef stew meat & barley it got thick like stew. Can't find the old fashioned pearled barley anymore. It's all the quicker cooking stuff.

scallop chowder is simmering away and smelling good!!   added some seasonings; slat and pepper along with some ol bay!!   and some mushrooms...

I like that Ol Bay.  Your soup sounds good Mike.  I usually make some oyster stew around Christmas but haven't gotten around to it yet.
