Title: Beaver sticks

10 pounds of beaver meat
9 pounds of venison
6 pounds of beef
High temp cheddar

Wow,  turned out awesome.

I brought the meat to a local butcher.  He suggested the beef and venison because the beaver meat has the consistency of goose or duck

Look and sound good. I always mix beef instead of pork to make sticks or summer sausage. Beef is much firmer than pork. Any bird meat is basically ground mush.
