Title: Meat prices. What's a sale?
Post by: The General on May 05/02/16, 11:11:48 PM
I have no idea what are good prices on various kinds of meat.  For those in the know what do you feel constitutes a sale.  When I'm at the store I just buy what I'm looking for.  I'd like to be able to come to this thread the next time I'm at the store and see if something is a good price.  Thanks everyone. :happy1:

Well, lots of CSR's (Country style ribs) at $1.89 right now...wait a month, they'll be around a buck a lb. Chicken is .99 lb right now, and lots of 85/15 burger is around $3.49 lb right now...stock up! I got frsh ground chuck 2 weeks ago for $2.99 lb for 85/15. Twelve lbs got me started for the burger wars.  ;)

I will post prices that I see every Sunday.  One thing in the future though is to be on the lookout for the Target ad that will come out a week before Memorial Day and the week before Labor Day.  they usually have baby back ribs, spareribs, or St. Louis ribs for a real hot price so you can load up on them.  good luck.

When I see pork loin, brisket, baby back ribs, St. Louis Ribs at the store what are very good deals per lb on those items?

Cub has half boneless pork loins this week for 1.99 lb.  that's a good price.  I use that for making Canadian Bacon.  Baby back ribs around 2.99 lb. is a good price.  The regular price is a little over $4 lb. for those but some stores have them on sale this week at under $4 lb.  Costco and Sam's usually have a good price on them in two or 3 packs but as far as when they are on sale in the other stores, 2.99 lb.  Is my go to price.  Briskets can vary.  Walmart has low prices on them usually around under $3 lb for the whole packer, but they are USDA Select and not choice.  I've seen just the whole flats for under $4 a pound at Costco.  I will do whole packers which can be up to 16 pounds at times on average which is the point and the flat.  Now for a 5 pound flat or in that weight range that has the less waste but does run more per pound.  Don't see many on sale though.  St. Louis Ribs are around $4 lb. latelly but like I said earlier about the Target ad if they run them they will be a great buy.  How much is something we will have to see the week before Memorial Day and then it's time to stock up.  Most of the time that week they run baby backs or St. Louis ribs.  good luck.

I brought this up on the rib section but should be here for those who wonder.  So RH how much should a guy pay for beef ribs.  How about if my local butcher at the grocery store is trimming them off.  Are they half the price of the rib roast?

LPS,  the beef rib prices will range from 3.29 to 3.99 in those cryo packs.  Normally when they take them off the ribs at the shop they do not reduce them right away.  [Holliday times when they are long on rib roasts they are reduced and I have gotten them for 1.99 lb.]  Best times to look for them is after the hollidays [Christmas mainly], or check the reduced spot where you shop.

Snow,  I have been getting 16 pound bags at Walmart for $5 which isn't a bad price.  It's in a black bag and a off brand.  Thanks for the reminder .  I'll be waiting myself for the hot prices at Lowes and other places like that.  Wasn't it last year we paid around $10 for two 20 pound bags of Kingsford?  good luck.

BUT yeah if ya catch the add rein let us know.

The "Big 3" summer holidays tend to have great deals on both ribs and charcoal.  I have found charcoal for around $0.26/lb when you see the double bags on sale.  HD and Lowes like the 18.6 lb bags for $10/pair, and Walmart with sell the 15 lb bags for $8/pair.  Watch the flyers and if you see pallets of it in the store at normal prices, prepare to make a run the following weekend. HD has already run them one time, and they will again soon.  Walmart has been selling their 15 lb bags for $5, but you can do better!

For ribs you will see a number of different deals depending on what they get from their suppliers.  They are almost always the Hormel "Always Tender" ribs, which mean they will be packed in a salt solution. It's no big deal but be careful with your rub's salt content as the ribs can get "hammy" with too much salt.  Not an issue if that's what you want, but I try to limit it.  I always do 2 or 3 clean water rinses before prepping them and that helps with the salt, too.

You can get BBs for around $2.50/lb, St Louis style spares for $2/lb, and full spares for $1.50/lb.  I prefer to get them from Target as they usually have the BBs or St Louis cuts, and I pick them as small as possible.  Walmart and Cub will tend to sell whole spares. I will stock big for Memorial Day's sales, and fill out as needed for July 4 and Labor Day.

So, for some reason, the ribs at target are advertised a little wonky this year, or the location I have been shopping is wrong.  They advertise BB or St Louis style spares for $2.99/lb.  What I see in the store is BBs or ST L Spare for $2.99/lb, but a second smaller tag with "Excel Tenderchoice St L Spares" for an even $2/lb.  They were mismarked on the actual ribs and a guy had to re-weigh and price them accordingly for me.  Worth paying attention to if you are shopping for the weekend or for stocking up.  I bought 8 racks and the guy didn't bat an eye when I asked about the price adjsutment.  Good Luck.

I dont know a thing of country market.I do know if a meat guy was onhand and they have a full equipment shop. You could have asked for he or she to run it through the tenderizer. They make great chicken fried, swiss steaks, cubes or just grilled low an slow. When sirloins go on sale as a whole primal, I have the fellers at Cub or mostly CashWise cut em to 3/4 inch and ask for 2 runs through the tenderizer.Man they turn ouut tender and tasty the sirloin to me has more flavor the round is cheaper BUT I wait for sales and tale the best price.
Bottom round is excellent slow an low or slow cooker MMMMM
We have a 4 lb pork roast in a slow cooker since 9 am today,Carrots,Garlic, onions, turnips,Savory a  herb and a pinch a 5 spice

is it seasoned???? if not season it, tie it up and cook it on a charcoal grill indirect heat. put a meat thermometer in it when its the temp pork requires take it off wrap it in foil for a while. cut up and serve. should take about 3 hours. I,ve grilled ALOT  of pork loins this way and the only issue I had was drying out cause of leaving it on the grill to long!!!!

in the words of RH................good luck!!!!!

Del, you got some good advice there.  I have done them in the smoker and on the grill.  Indirect heat and use your favorite seasonings.  Stick a thermometer in there.  I usually put it right in the center of one of the ends.  145 is the safe internal temp.  I usually leave it in until 155 or so.  When it reaches that I take it in and put a foil tent on it and let it set for a few minutes.  You got a 10 pounder.  Use some for roasts.  And if you like cut some thick chops off of it.  I like the "rib eye" end for roasts myself.  It is the end that tapers off and has two colors in  the meat [best way I can describe it] It's also the most tender part of the loin in my opinion.  This is the loin I use for Canadian bacon as well.  Great buy and many uses.  good luck.

You know about me and Cub, Del. Never, ever step foot into that store again. Plus, they're like 9 miles away from me...one way. Way opposite end of town. With store manager buddies that will meet any price in town, why go elsewhere? Plus, Walfart meets any price. Scan the ads and go there. Except for meat.  ;)

Yes yer right once a large store buys meat to resell they need not label it as prime ,choice or utility. Once they stamp it store named meat they get around that requirement an most their meat is utility grade!!!

Walmart does have choice meat.  It is clearly labeled.  However most of the beef sold there just says goverment inspected.  That is Select grade which is most of their meat.  If it's not labeled choice it's select.Cubs, sam's, Costco sell all USDA Choice.  All the meat in those stores is choice.  Hy Vee has choice meat only in their service case.  All the meat in the regular cases is no different than Walmart.  It is select grade.  I think they label it black angus premium.  Nothing premium about it.  I shop at Cubs, Costco, and County Market for the most part for meat.  All of their meats is choice. good luck.

Title: Re: Meat prices. What's a sale?
Post by: Reinhard on August 08/31/16, 07:07:42 PM
Grading beef has changed over time.  Now it's Prime, choice, and then select.  Back in my day's they used to grade them by yield numbers as well according to how much waste [fat ect] is on the animal.  So it was choice yield 1 for the least waste and so on down the line.  We used to get choice yield 2 most of the time.  The lower the number, the more it cost at purchase time for the buyer [store, meat locker].  Used to be a caner label also.  Meant for beef just for grinding trim not for cutting into steaks roasts ect.  Utility is something I can't remember but there could have been that label.  Something like that is usually meat for grinding only.  good luck.

Used to be. But in the early 60s to mid, retailers didnt want to use the name utility sounded to crude and people didnt want it.So the USDA was lobbied by retailers to create a more marketable name! Now in stead of 4 grades a meat (beef only) Prime,Choice,utility,grinder/hamburger.They complied for the new 8 grades.Their only graded at slaughter houses, then sent out for retail. Now goverment cuts are a whole different story when they put in orders for canning!! Thats tough trimmin for govt! no grading fer govt the inspecter stands over yer shoulder!! Heres the new grading

And isn't another word for "select" utility grade, RH? That's what I learned years ago.....

I worked for a local meat plant for a year. Thought I was in great shape after working in a steel place, slinging steel all day. NOT! Grabbing huge slabs of beef with a meathook and slinging them up and over the sides of the big grinder tubs all day built the muscles up!

That's what it was like in the early days of my butcher career.  Every day we took hind quarters and front quarters off a semi.  Put them on your shoulder, put them on a meat hook, and then process them into various parts for cutting.  Now it comes in big boxes, and then you cut them into various cuts for the case.  Sometimes I wonder how I lasted so long in that buisness without an injury.  The cold gets y ou though.  Every day in 45 deg or less is tough on your hands.  Still have all my fingers.  Lot's of the guy's have some missing.  Have to pay attention to that power saw and your knife everyday.  having a sharp knife is very important and safer than a dull one.  good luck.

I always thought it was somewhat strange or maybe even ironic that the bones off the pork loin sell for more per pound than the boneless meat does.....

Aren't baby backs just the bones that get removed to make boneless pork loin?  The boneless loin is like 1.89 and the bones are 2.99+, so the more meat left on the bone the more profit, if I have it figured right...

This is one of the main reasons I will not shop Sly-Vee...to me, it's deceptive advertising. This weeks SALE...85% hamburger, 2 lb pkg....$12.  That's $6 a lb, for chrissakes!!!! Everywhere else it's $2.99 right now.  I see this kinda stuff  in their ads all the time.

One thing to remember about Hy Vee's meats.  Only in their service counter is the beef USDA Choice.  The rest of the meat in their meat counters is Seclect.  They give it a fancy name but it is Select, just like Walmart's meats. Places like Cubs, Sam's, Coburn's, County Market, Festival and Costco for example have all Choice beef.  good luck.

Title: Re: Meat prices. What's a sale?
Post by: Reinhard on October 10/12/16, 09:07:47 AM
The chuck eye is part of the chuck.  It's where the rib eye "enters" the chuck, so it's a extention of the rib eye one could say.  Boneless rib eye's around here I would say average around $14 per pound depending where you shop.  The chuck eye can be as low as 4.99 at times when chucks are on sale to a little over $6 a pound when not.  I haven't seen them higher than that for choice, but some stores could price them higher.  good luck.

I've never been in a Hi Vee, there are none around here so I can't say if they have Select or Choice. Sounds to me Reinhard knows his stuff but my advice would be just look for the Choice sticker, I don't think any food chain would are mislabel a product as highly regulated as meat. I can't read the specs on the burger patties but keep in mind patties are the biggest rip off in the industry and the price is all over the place. I try to avoid prepackaged burger as it usually mechanically deboned and full of those little bone and cartilage chunks. They're pretty tough/chewy because of the compression too.

The patties are 85/15 choice. HyVee does this ad come-on thing consistently, makes you think you're getting a great buy.  If you pay $6 lb. for 85/15 choice burger, you've got a screw loose. It's $3.99 tops and way below that everywhere. Hy-Vee is the most overpriced stuff I've ever seen, with the exception of a Kowalski's.

Not RH but supply and demand play a facter with chuckeyes. A steer can supply 14-16 bone ribeyes BUT only 8 bone chuck eyes,so there are fewer which if the demand calls can be over priced.Out here right now 12oz ribeyes are 6 bucks each at Cashwise that equals 8 bucks a lb chuckeyes are the same cost if they even have any.So for equal prices I''ll take the ribeyes any day LOVE THAT FAT off the caps!!

Paying for the cost of convenience.  Hy-Vee caters to that crowd here...all the rich doctors and lawyers in this town practically staff the place.  I bought 15 lbs of fresh 85/15 grind  three weeks ago at Fareway for $2.99 lb. Pig chops have been going for .99 lbs there lately, too. Picked up a bunch of thick pork steaks (blade steaks, my favorite) for $1.19 lb.
Title: Re: Meat prices. What's a sale?

Patties are always higher because of the extra labor.  I've made plenty of them.  I used to be able to get a whole chuck eye roll.  Tied two together and made that instead of a prime rib.  Very good.  A whole chuck eye roll could give you up to 10 or 12 chuck eye steak but the deeper it goes into the chuck the tougher they get.  If I cut a whole boneless chuck we only took the first two or three chuck eye's off then the rest of the cut's would be chuck roasts.  When chuck roasts are on sale the chuck eyes can be had at 4.99 lb.  That's because like Dew said, there are a lot more of them and they have to move them.  The bigger the store, the most traffic, you would have more chuck eye's due to more sales.  So this is why you see different prices at different chains or store's.  This is true with other cut's as well.  Pork right now is cheap.  Lot's of sales with really low prices.  Stock up.  good luck.

Just curious, has anybody seen or priced lamb in the store lately? In particular chops and legs. Pretty sure it ain't cheap. I know some people squeal when we sell them a lamb and charge 2x the live weight price for the processed meat + the price of the processing. For example, 50 lbs. worth of meat (typical for our 100 lb. lambs) at 2 x $1.50 (2 x market price) + the $80 worth of processing comes out to $230. Divided by the 50 lbs. that's $4.60 a lb. We should probably be charging more than that but then we don't keep back a lot of them for the locker plant. A couple for ourselves and then a few sometimes for those who've spoken for them earlier. We are sold out BTW... ;)

Little comparison of names and costs Its funny when one goes for breakfast and has Cheesy Grits and toast for 4 dollars a serving.
Up the street its called cheesy palenta with brusheitta or crustani for 15 bucks a serving.
Go out to a grocery and get Noname 6 oz steaks (eye of chuck steaks) for 6.99,The same grocery has  eye of chuck steaks for 8 bucks a lb.BUT then in the fresh meat case they have a steak named after a old time hotel called Delmonico steak same eye of chuck for 12.99 a lb
Misleading or smart marketing you choose. Just be informed is best!!

Reinhard, I like it when people know their business. I was in the food business for years also. Way back to when I used to cut steaks for Harry's Cafe downtown by 10th and Nicolett, one of the only 5 star restaurants in the area at the time. I find it's hard to explain cuts to people because they know what they see on the shelves and not all the different trims. Evne worse, I downloaded an app to show friends some of those differences with top butts, 1184-1184A-1184B and prime rib 109-110-112 and guess what, even some of the old meat cutters numbers were changed. Even cold water and warm water lobsters seem to different in different places. Man, I'm old!

Ya Hawg, you are right.  Lot's of changes.  Not just in meats but in sausage.  When I first started out it was all hanging beef.  hinds and fronts.  We would also get rounds hanging with the shank on.  We had to break it all down.  Now it's all boneless except for short loins, standing ribs, and bone-in strips.  It's a lot easier for the butchers now that remain in the buisness and there are fewer and fewer journeymen left.  They are being replaced with on the job training with no skills.  Had to cut all the chicken for the counter back then, now it's all pre packaged.  Same with lamb.  Whole lamb back then and now all pre packed for the most part.  Man it's been a long time, I think we used to get whole pork loins and whole butts way back also so nothing has changed much there.  Whole fresh hams we used to brine and smoke.  Made our own corned beef.  Swedish sausage was great and sold a lot.  Didn't have all the crap they put in sausage now back then.  Still some great sausage though in the small shops around though.  That's why I still make my own.  good luck.

I think back also to how good jerky used to be. I still search out the good stuff but remember when some of the small shop's jerky was basically just "controlled rot" and actually had flavor? I loved that stuff. Even jerky needs a little bit of fat for flavor in my book. I like Jack Links for mass produced but that seems to be the Gold Standard even meat shops strive to duplicate these days.

the choices we/I have are coborns/cashwise in st. cloud, byerlys which is way spendy, or the local store thats a super value brand and 5 miles down the road my old hometown butcher shop/ grocery store that i believe is a home pride product>>>>>> they do there own meats at the meat counter however but because of the horseshoe chain of lakes and the tourists they dont do much for ads!!!!!!!!!

just asking!

Glenn, There is a Coburns around here and Sams and Costco but I just don't have the time to research every story around here. Costco and Sam's really don't have sales.  Their prices changes when their costs do.  If I'm in Costco or Sams for example which is not that much and see something that would be a good deal I would post it.  I have done it in the past with butts butt that was by the case which I buy sometime.  I kind of keep it in the area where I live.  But it would be great if others post sales of the stores where they live.  Kind of like "see something, say something" deal. good luck.

That's a good price on them Del.  While Butterball is still a good bird they are not like they used to be.  Used to be basted with butter, then margarine, and I don't think they are different than any other grade A bird.  At best injected with a sodium broth solution like other birds.  I just look at the price now as long as they are Grade A birds.  At 99 cents lb. I'll take a Butterball also.  good luck.

so yesterday I went to my favorite meat locker plant to get some questions answered about venision trimmings and meat prices.

a half or whole hog processed was 1.09 per lb. beef prices were for a half was 2.59 a lb. a front 1/4 was 2.49 and a hind 1/4 was 3.19. since its only me and ma I asked about a 1/2 of a 1/2. they said only if we had someone else to split it.

1/2 is a lot of beef for just the 2 of us but really thinkin of going that route just so we can get all the different types of steaks etc. he said a 1/2 averages about 390 lbs so it would require us to shell out $1000 bucks but  it sure would be nice to have it in the freezer!!!

like I,ve said before we are really limited to the stores that get posted here with meat sales sooo........

What does one do with a rump roast?   I stop in there on occasion after my pumping iron etc.

Gotta stay strong enough to put on a duluth pack, and to put a canoe on my shoulders  (fortunately it is kevlar).

So do you cook the crap out of it in a crock pot or do you cook it to 130 and slice it?   It is bottom round and I figured it would just get dry and tough if pot roasted/braised.

I don't know why you think I haven't or don't barbeque/smoke stuff like pork butt and ribs?  Or make pot roast?   I use chuck for that.  Been a while since I made swiss steak, now that I think about it.

Done it and will do it again.  Not much of a crock pot fan, except at the cabin.

Getting to know the sous vide thing.   Works real well for some stuff.   And in the winter when it is too cold for me to fire up the smoky mountain or weber.

Well, today I am fixing aforementioned pot roast for when the grandkids come tomorrow, unless the weather hysteria freaks everyone (especially my wife) out and they cancel.  And off to pick up the Christmas cards at costco sometime.

So, this Chuck guy knows how to make a proper pot roast? Is he a neighbor?

Cub this week is celebrating a grand opening of  another store off 109th and University in Blaine.  Pork half boneless pork loins 1.59 lb.  80% lean ground beef in 3 lb. tubes 1.99 lb.  Cooks smoked ham, bone in, half portions 1.39 lb.  hormel spiral half ham bone in 1.99 lb.  Beef Bone in prime rib roasts 7.99 lb.  Beef NY strip steaks boneless steak or roasts 6.99 lb.  Perdue fresh boneless chicken breasts 2.99 lb.  Oscar Mayer bacon 2/$7.

Coupon. Sugardale semi boneless smoked half ham 1.28 lb. with a $20 purchase.  Boneless beef prime rib roasts 8.88 lb.  Bone in Hormel cure 81 spiral sliced half ham 1.88 lb.  Frozen Jennie o turkey 1.18 lb.  Boneless round tip steak or roast 3.59 lb.  Boneless beef rump roast 2.99 lb.  Boneless pork sirloin chops or roast 1.99 lb.  Essential everyday frozen turkeys 1.29 lb.

Aldi has fresh bone in turkey breast 1.79 lb.  Appleton Farms spiral sliced half ham 1.69 lb.  Beef bone in ribeye roast 5.99 lb.  Beef boneless sirloin tip roast 3.49 lb.  Appleton Farms smoked ham butt portion 1.09 lb.  Appleton Farms boneless spiral sliced hams 2.99 lb.

One thing to keep in mind when buying a prime rib roast.  Lot of folks look at the price and not the trim.  Why buy a cheaper bone in prime rib or boneless when there is a inch or more of fat covering it?  Sure I look at the price, most places have them on sale now, but I look at the trim also.  Don't mind a 1/8 to a 1/4 inch fat cap but not much more.  good luck.

Yep.  Got to decide between the boneless rib roast in Cryovac at Costco and the nicely trimmed one at ye olde butcher shop (that's really its name) here in Rochester.   Probably 2 or 3 bucks a pound difference, so need to take another look at the trim on the Costco ones.

Post by: Reinhard on December 12/13/16, 04:25:33 PM
That is  something to think about for sure.  Costco, Sams, Cubs, Coburns, Festival, and County Market all have the same beef.  USDA Choice Angus beef.  Hy Vee has choice only in their service counters, NOT in the meat case.  Their meat case is all Select as far as beef is concerned so you have to note that also.  Walmart has a  small amount of choice and it is marked choice and the rest of the beef is Select just like Hy Vee has.  good luck.

Yep, I figure it all comes from the same packing plants, although Costco sometimes has actual prime beef for sale.  Boy is that stuff spendy.

(Last time it was a "doesn't apply to CAWchester, cities ads are different"...news to me) I asked about the limit on the chicken; guy said "not that I'm aware of''....OK, fine by me. Got myself 8 pkgs of thighs and 4 pkgs of drumsticks....a little over $20. How can ya beat that? Then gotta count 49 cents for the stamp, or another 16.33 cents per pound...

If you gonna be so picky.   Still high.   I bet I can buy them cheaper than that at Zups in Cook, not known for low prices (at least in summer)

It's a good price for around here del.
Just thought I'd share....
Next closest place to shop from here is Cub at 20 miles...add the price of gas, labor (time is 💰) I don't think it's that bad. These are trimmed, no fat, no bone.

If I drove to Cook, I'd be up to $10 a chop....  :rotflmao:

You would have to divide the .49 cents between 12lbs.... cause I bought 4 packages.

Momma don't allow no dark meat chicken... :tut:

Reb, I brought home my limit of walleye's, 5 nice perch, and two crappies.  Little cook out there but my brother and me had a great time.  Fishing wasn't fast but in  the end there will be some meals.  Never get enough of the north.  good luck.

They can and  do!!!! I went to the Cub here after RH's post of one ad, and the store here refused to honor it...store mgr said "They are in a different time frame than we are, and we don't have to honor their ad". That was the last time I ever went to cub to shop. (With one exception)  The guy was an ass about it and I damn near punched him. Lucky I didn't.
