hmm done something like this with perch, was mighty tasty. i'll have to give this a try.

I have done something very similar and yea it's good. But then I always keep skin on sunfish! Don't do it much cause my family members a finicky and not big fish eaters! :bonk: :bs:

works great with walleye,halibut and cod as well,salt/pepper and garlic cloves with sliced onions,cherry word for added smoke flavor off the grill.

I do salmon that way with thin sliced onions added,My sunfish NEED crispy skin!!! so they get a pan fry!!!!!
