My friend quit using the jerky gun and just smashes the burger thinly into those cookie sheets and does the cook process.  Then just slice it into the size of pieces they want.  I want to make some too Glenn.

yea, those jerky guns dont work real well. I think I threw mine after using it a couple of time.
Like LPS says, press it out on a cookie sheet.
I prefer the sliced stuff myself.

No, they don't work really well, but they get the job done.  I prefer sliced too, but when I have small trim pieces to use up, grind, cure, and shoot is the way I go.

That's basically how Dehmer's in St. Michael makes their venison bacon.  They form it in an 8 X ?? loaf and then smoke/cure it before slicing in roughly 1/8 inch thick pieces.  Great stuff.

sorry, my youngest way back in the day wanted me to make more" bark "one day lol. Drying out a piece of pre seasoned burglar will probably shrink up quite a bit, I'd run em  a smidge thicker or they might turn out to be air hockey pucks..
