Well it started for me. 23 qts of pickles. 7 of which have tia chili peppers for some zip. :happy1: got them from Beck's in elk river.

that was a 1/2 bushel. when i was there getting them musta beeen the owner of the place told the gal he had another 4 - 1/2 bushels and she tried pawning one off on me. i thought about it for a bit, but a whole bushel is alot of work at one time.....seems like ya never get done. that half bushel was $46.00.

Best comedy actor.....Don Knots as Barney Fife. When I watch them, I still break out laughing. The funniest one was the episode where Barney breaks in 3 new deputies.
They had to do that scene multiple times because the actors would bust out laughing.....especially at Floyd the Barber.
Quite a few episodes where his gun would go off accidently. Which is why Andy only allowed him to have 1 bullet. Which he kept in his pocket. :rotflmao: :rotflmao: :rotflmao:

Couldn’t agree more, Ken. Barney really made that show. Don Knotts had such an expressive face, much like Carrol O’Connor did in All in the Family.

Sooo, when the little cukes are growing I could probably do 2 quarts every couple of days. My question is , like now I have a few but in a day or so they get soft, or kinda rubbery. Are they still worth canning when more come a long??

Thanks Glenn, thought I could hide a few in. They're starting to pop on the trellis, came home and grabbed a half ice cream pail with a bunch more little ones showing promise. The first round had to be refrigerator sweet pickles with some serranos cut in half for a little bite.

No but I'm betting they could be refrigerated, added to some Hendricks gin and muddled to make a tasty gin & tonic. :happy1:

those types you will be good. But if your going to can them like I did, the sooner you get them in jars the better.

yep. Not really a fan though.

I do what you are doing except I blanch in the microwave. Then spread on cookie sheets and in the freezer overnight. Then measure out a meal and vacuum seal it. As long as the seal doesn't break....They keep for a LONG time.

that and maybe other things. I hate it when they appear to seal then later aren't. I usually only do enough for 1 year at a time
Granted I don't have the best vacuum sealer but not the cheapest either.

:happy1: Sis & BIL make theirs with milk & butter but it's cut it off the cob & blanched. Then 1 meal's worth goes in a vac seal bag & frozen. :scratch: I'm not sure of the exact method but it's good.

This was my afternoon. 11 qts stewed tomatoes and 4 qts green pickled tomatoes.

no picture but made up 5 more pints of tomato juice. about the only thing i can see left to can is my pickled green tomatoes.

Did this between yesterday and today!! Only canning I want to do yet is more of the pickled green tomatoes. And that's after I get back from up north at the end of the month

Are ya gonna wrap any of the green ones up in newspaper and store in a box until they turn red? Nice to eat fresh 'maters in late October/November.. I was eatin' some of mine at Thanksgiving! :tongue:

The reason I ask is we did 10 minutes for our qts, but they also had a little lemon juice added for more acidity. Just curious..

The stewed tomatoes, about 40 minutes. Never had issues with sealing as long as the rim of the jar is clean.
Tomato juice I don't hot bath. Once the juice boils I jar it and at the same time I have the lids in boiling hot water. Put them on and tighten the rim. Just for extra precautions I tip the jars upside down for 5-10 minutes to keep the lid hot longer. Usually never no issues with sealing either
Pickled green tomatoes, with these I did the same thing, but when I do a big bunch I hot bath for 10 minutes, after the water boils.

I've never ever worried about acidity In my tomato canning and very rarely do have jars that don't seal.
Guess I never figured out what all the fuss was about.

This coming weekend will be it for canning, whats left in the garden plus 7 gallons of frozen maters will be turned into tomato/ basil soup. Think I'll save some jalapenos for poppers yet but the rest with the serranos and bell peppers will get turned into hot sauce, can always use that.

Those sound great. I need to try that next year. Let me know what kind of tomatoes you use next year. I have never tried a pickled green tomato but can't remember eating a pickled anything that I didn't like.

LPS, I just use what I grow, don't think it matters. Just gotta be green. I plant early girl, beefsteak, better boy big boy varieties.
I did buy some green tomatoes but have no idea the variety.

Ok. We got Roma tomatoes this year. I thought they would be a fun size to raise. But they have no flavor. They are called Amish Paste Romas I think. Need something with more flavor next year.

Your right, Roma's have no flavor. There a meaty tomato, good for things like salsa. I quit growing them.

We had some one year that turned out great. They were all the same size. About the size of a tennis ball. Not too big with all of the wrinkles just a nice tomato. Wish I knew what they were.

Try my favorites...Early Girl's or Better Boys. I grew both for over 10 years, and they were always great. Never had blight or end rot. Early girls are tennis ball or a bit bigger size, and just right for slicing on sandwichs. Better boys are bigger and have more "juiciness''. The Early Girls are full of "tomato flavor", and to me taste like a 'mater should taste.

some years when i just plain need more tomatoes, i buy some. not sure what variety they are these greenhouses plant but i noticed there core is really thick and hard. there even hard to eat. when i can those i cut that core out pretty good as i dont care for that. even the green ones i bought the other day....same thing.
never an issue with the ones i plant here at home!!!!!

That's cuz theyship 'em green then ripen 'em by blasting 'em with etheylene gas......true.
It's a "fake' ripe, that's why they're hard. I won't even touch those things!
Exception: a few brands of grape tomatoes, I will. They ship ripe, not green.

the tomatoes i've bought came from becks on hwy 10 north of elk river and bob and judy's just out of monticello, they grow there own...along with a whole lot of other garden stuff for sale. they get shipped from there field up to there store front!!
that bob and judy's went out of business. i heard the guy passed away. i really liked that place!!!!!!!!!

I've bought 'mater's from the "farm trucks" and one orchard veggie place. None were that great, IMO. Asked every one of 'em "what variety tomatoes are these?" All answered "I'm not sure"... :rolleyes:

We have a nice greenhouse in Williams that we go to. BUT if you are too late you don't have as much of choice of course. We will get on it earlier this year.

With my smaller garden the small Roma plants work great. Last year I had an early girl with the roma's and it grew enormous,
smothered several other plants. I should have pinched it off like Ken mentioned earlier in the year. Having a different variety is a good option.

Why? The 32 plants plus 24' of trellis is plenty for us.

We have 5 or 6 up here most years. Not sure if the BER had anything to do with it but we're still getting tomatoes too. Just picked 5, they're all smaller now & are taking longer to ripen but with this nice weather who knows :scratch: how much longer they'll go. :crazy: :confused:
