Here is a recipe for Taco Soup. You can make adjustments to onion and green pepper. Put in whatever looks right. Also add jalapeno if you want.
Or a few drops of Roony's pepper sauce. That stuff is volcanic. :smoking: :smoking: :smoking:
Ingredients
1 pound ground beef
2 15 ounce cans of beef broth
1 small onion, diced
15 ounce can black beans undrained
15 ounce can diced tomatoes
15 ounce can kernel corn, undrained
1 green bell pepper
1 packet taco seasoning
1 packet dry ranch dressing mix
optional toppings: crushed tortilla chips, shredded cheese, sliced green onions
Instructions
In a pan, brown and crumble ground beef Drain excess grease.
Put ground beef in slow cooker.
Add in diced tomatoes, corn, black beans, beef broth
Add in diced onion and bell pepper
Stir in packets of ranch dressing mix and taco seasoning.
Cover and set on low for 6 to 8 hours.
Serve and top with: crushed tortilla chips, sour cream, shredded cheese, sliced green onions

Thanks Ken, that looks good. 2 questions, if I'm reading that right you have mentioned black beans twice??
You also mentioned beef broth but doesn't say how much???

what does the ranch dressing mix do for it??? sure sounds good!!! just have never used the dressing..

We've had something similar Ken, good stuff! I believe we used crushed fritos with it.

Not sure why it's Ranch, but it tastes like tacos. I suppose you could use 2 pkts of Taco seasoning.

I'm having it again for lunch tomorrow while I watch Football. I should mention instead of crackers, I crush corn chips on top.
one other thing. The recipe says 6-8 hours on low in the crock pot. That's to long to start it in the morning and have it for lunch. So I cut the time in half by setting it on high.

I'm thinking about putting it in the crock around 11, fishing till 5 and supper is ready when I get back?

Is it real runny, or more like a stew when done?

It is not thick like stew. Thinner like good soup.

I checked my recipe again.....I used frozen corn from my garden and just eyeballed the onion and bell pepper until it looked right.

I chopped all the peppers & onions up.
All I have is venison burger, so I'll have to sub.
Looks like I got a lot of peppers though.....
Meat is defrosting....

In a slow cooker venison will work just fine. All those flavors will erase the venison taste.

Burger is browned. I got a couple jalapenos left over from a different meal, gonna toss those in too.

Yeah I saw that. The original recipe calls for 1 can beef broth and 1 cup of water. Why put water in and dilute it. Plus it calls for 1 can of corn undiluted. I used frozen corn that had no liquid. So instead of no corn liquid and no water. I upped the beef broth to 2 cans.

I would tend to agree. I've been starting to use broth more often then not when a recipe calls for water :happy1:

That looks more like hotdish. I would add a second can to make it more like soup. The other thing I did and it looks like you did was to have larger chunks of ground beef.

Even with one less can of broth.
Topped the bowl with some shredded lettuce, shredded taco cheese, chilli cheese Fritos, sour cream & taco sauce!
