I know it’s not USDA prime and there’s a bit more fat that usual. That just means there is more beef fat to melt down and make some fresh cut fries with. If you’ve never made fries in beef fat you have to give it a try, best ever.

Pretty hard to find prime anything.  Most restaurants get that I think.  Choice is good enough and most of us wouldn't know the difference.

Huge score!! You gonna separate the point and the flat coffee or chuck the whole thing on? Prices came down this away also, but not that much..

I usually separate the flat and point, cook both together. Once the flat is done I take it off and continue cooking the point on for making burnt ends.
