Does anyone have a good recipe?  I cooked a small batch of crappies today and used corn meal flour instead of white flour and was really happy with the results.  I just used a basic recipe and I was wondering if anyone has some good suggestions on extras I could put in there to make it taste even better.

My favorite and an easy recipe for batter is saltine crackers, flour and egg. Drop the fillets in a deep fryer until golden brown and eat em up.

I've tried just about every batter known and still think this is the best. Lowrys can be added to taste, i don't use it, but we always offer it at our fish frys.

Basic Beer Batter (The Recipe of Ones)

1 cup flour
1 tsp baking powder
1 tsp salt
1 tbsp sugar
1 egg
1 beer

You probably don't need to use the whole beer - save a swallow or two for yourself!

Make sure the fillets are dried off on paper towel before dropping them in the batter.

A lady I used to know made a really good batter but she said how most people batter the fish in the wrong order.  Now that I do it her way it does seem to stick better.  Might just be in my mind but anyway this is what she said.

1st dip the fillets in flour, then in the egg and finally in the crispy stuff (crackers, corn meal ect) 

I typically put some seasoning in the flour and in the crispy stuff.
