Had a nice morning fishing in elba, all the fish and crayfish in the first picture where promptly eaten, and the second picture is my dad with a good brown (about 14), he caught 4 around that size and one bigger, but we decided to only keep smaller fish. Seems like the white water river has finally recovered from the flood, and is back to its old self.

first i boil them for ten minutes (it's better if you put them in live), and from there just pick them apart by hand and use a bit of salt and lime, or else I get the tail meat, devein it with a knife (just like shrimp) and use the meat like I would with any  other shell fish (soup, ceviche, pasta, salad etc). I have had  bad luck getting the meat out of the tail without cooking it first, so now I just boil them before I do anyhting else.
