    I learned this this year in Canada.  Walleye wings are the  pelvic or ventral fins .  After you have removed the filets pass you knife under the 2 ventral fins.  You will find a nice chunk of meat there.  It should still have both fins attached.  These make great appatizers and there is no limit to how many you can have because they are concidered  waste.  There will be a tendon  beneath the meat.  Just bite and pull.  Delicious!!!   :chef:

And don't forget about cutting the cheeks out... taste just as good as the fillets and wings.
