Fish without the fry
Okay so you’re out camping and you want some fish, without the fry. This is a real simple recipe, normally feeds four very hungry campers. You can bring cold mashed tators from home, and if you like, to make it faster, put all the dry ingredients in a zip lock bag as well, then at the campfire, do a bit of shake and bake and dig in. if you add crushed cold bacon or sausage, serve for breakfast.

Fish potato patties
2   cups of cooked white fish fillets –boneless (these can be poached ahead of time  or leftovers from a fish fry)
4 medium potatoes, boiled- then mashed 
2 tablespoons butter, 
1 tablespoon lemon juice (optional)
1 teaspoon parsley (more- if while you’re cooking there is lots of bug’s fly-n around)
1/2 teaspoon onion powder
1/4 cup breadcrumbs
Catsup, for topping if ya like
 Mix all ingredients together except for the breadcrumbs.
1.    Shape the mixture into patties.
2.    Press each side of the patty into the breadcrumbs.
3.    Bake over hot coals for 20 minutes on tin foil-flip after ten mins. -Test for doneness
