Say i have about 3-4 lbs left of that mix of summer and boy it would make sometasty sticks, if the 21mm stick cassings, but I want to put a little heat to it, not guzzling water  heat but hmm i feel that kinda heat. 3-4 seeded jalo's, more crushed red pepper?? suggestions please.

I think you have already added some red pepper flakes to the main batch?   You mentioned that it had some heat but you wanted to have a little more.  What I would do with 3 to 4 pounds is to add one tsp of crushed red pepper and mix it in real good and then make a test patty and fry it up and check.  if more is needed then add one more tsp of the red pepper.  With crushed red pepper a little goes a long way.  I'm going to start experimenting with Korean crushed red pepper.  It's not as hot as the red pepper here but does add some flavor as well.  Never used it in sausage so I'll have to try it in a small batch like 10 pounds and test patties until I get it right.  But that is what I would do.  good luck.
