This is a great video on spatchcocking a turkey.  Also the cooking and cutting up the finished bird.

Did a few in the smoker and oven for Thanksgiving one year. Turned out great and gets done faster.  :happy1:
Cooking over a open fire is all fun and games until someone losses a wiener!

Nice looking birds Leech.  I forgot to hit the post on the video above.  Ours is in the oven not the grill.  Got lazy.  Great way to cook a turkey or chicken.  This guy leaves them sit uncovered for over half an hour and a 12 lber is still at 135.  Then he cuts them up.  I am going to try to wait that long.  LOL  Will let you know how it works out.
