nope. Wash the tomatoes, cut out bad spots then stick the tomatoes in hot water till soft. Squish them in the juicer.

Bring the juice to a boil with added salt fill jars a few at a time. Put lids in boiling water to heat.

I always tip them on tops for a while. Then flip over. Just went out and looked, looks like a 100% seal rate.

My wife takes the smaller tomatoes (tennis ball size) blanches them for a minute or so, removes the peeling, cuts them in pieces and stuffs them in a plastic jar. Then just pops them in the freezer. Also gave away two boxes of tomatoes because the house was full.  :azn:

Today I picked two three-gallon buckets of apples.  We peeled, cored and sliced them. Put in gallon freezer bags.
***I started out with nothing, and I still have most of it.***

My canning book says to cover them with water and boil pints for 40 min. and quarts for 60 to kill all bacteria. :confused:

My wife makes both salsa and canned tomatoes using the old open kettle method. This is very much frowned upon by the experts. She is very careful that things are clean and sterile. This is how her mother did it and her mother's mother. Hasn't kilt us yet.

I do my salsa same way..  the juice and salsa is cooked/ boiled prior to going in the jar?

We do it Ken's way but use the Insta-pot instead of the old pressure cooker now.

We are still getting zucchini and tomatoes. The main thing I have to process this year is the peppersauce.

sure is. I'm giving 7 jars to the guy where I store my boat and where the horseradish is planted.

I think this will last till next year. Make it in the fall with a month with an R in it. I tried store stuff mine is way better, not bragging.
