Do you tap for yourselves, or do you sell what you collect? I may be interested in some if you sell any of your supply. Thanks.  :)

What kind of a process do you do to cook it down?

yes we do sell it. we use what is called a flat pan its 30 inches wide by 6 feet long. and sits on a steel frame with a fire box at one end and boil it it with wood. it takes 40 gallons of sap to make one gallon of syrup. last year we made if i remember right 70 gallons, were up to only 18 this so far.we sell it for 11 dollars a quart or forty dollars for gallon. also have pint and half pints.

Is there a certain temp that you try and maintain when cooking it down? How many trees does it take for 40 gallons of sap?

you want to keep it boiling during the process.when the sap comes out of the tree its around 4% sugar and the finished product is 65% sugar. its hard to tell how much you get out of one tree. 2 trees right next to each other will produce different amounts of sap.you tap the tree on the southwest side.people always ask us what we put in it.some people find it hard to understand the word pure maple syrup.we dont keep track of how many tress or taps we have out.this year we didnt use all our taps because of the strange weather we have had, didnt even know if we were going to get much this year.we are just a father and son hobby my kids 7 and 10 help us out also.

We did this on a field trip in school one time. It was a long time ago but I remember how good it was to have pure maple syrup. Good luck to you it sounds like a fun hobby.
