I filet with skin removed, it's faster for me.

Yeah, its definitely faster and easier with everything off.  I do like the scaling them though - gives some nice crunch and flavor to the filets.  It takes too much time though.  If I am camping and I have a few small sunnies, I will just scale them and then peel the meat off the bones (Make sure you get it all!!!)
