Had company over yesterday so I made a prime rib and my version of stuffed potatoes.  Pulled the rib roast out at 135 but was shooting for 130 but was distracted by good conversation.  So I didn't let it rest as long as normal.  Sliced it up and the slices went right in the au jus I made up.  I have the recipe of my twice baked potatoes on my site below in the Recipe page.  I bake the potatoes and then split them.  Scoop out the insides and put it in a large bowl.  Then I put butter, sour cream, milk, salt, pepper, chopped green onions and cheddar cheese in the bowl and use a mixer until smooth.  Then I put the potato mix back in the shells and top with more green onions, lots of bacon that I fried previously, and more cheddar cheese.  Bake at 350 for 15 minutes or so until the cheese is melted good.  good luck.
