Go get em thunderlund!!! Man I've been up in smoke lately , stinking up the neighborhood nicely.  Got me some of rebs secret rib rub for this afternoon.  Think this week will be lots of salads and fasting perhaps..

Those are ribs? Man they make the ones I have been buying look like the hogs were on a diet....  I buy Baby backs and St. Louis spares and none have looked as meaty as yours Bobber.  Very nice...

Thanks LPS, probably just the angle of the pic but they were awesome.  Rebs rub was a hit, I ended up smoking them with low heat for an hour on the grill then dumped more charcoal in with some high heat smoke then foiled for the duration with with a bourbon wiskey BBQ sauce the last hour, juicy and pull off the bone.

I’m a bit late to reply but I’ve used my smoker in temps under 20 deg. before.  It takes a little longer to get up-to-temp and longer to recover wen you have to open the door, etc.  So I just factor in a little more time.  I also don’t open the vents as wide as that cold air induction can be tough.  I usually wait until it’s a little warmer to do things that require a lot of convection to dry like sticks or summer sausage.  But for cooking with smoke, it does just fine!  Case-in-point my Super Bowl feast.  I used RH’s method for smoking a lean beef roast (a rolled rump in this case).  I injected in with Beefy Onion soup (with a heaping spoon-full of extra garlic) and put a bacon cap on it!  Cooked it at 250 deg. and added a couple of pans of Cherry Chips for the first 1-2 hours.  Pulled it at 130 deg internal temp and let it rest for 30 min or so and then sliced it.  I’ve done this a few of times now, it’s SO GOOD!
