I have a charcoal water smoker and have never actually used it as a water smoker.  I've only used it as a normal grill.  I'm thinking of trying a chicken, brisket, or turkey on it and using it as a water smoker.  Anyone have any expeirence with these? What is good or bad about them?  Do you still use wood chips?

That's what I use for smoking my fish. It does help keeping them moist. I use a base of charcoal and use apple wood on top for the smoke flavor. They turn out real good.

I havn't tried anything other than fish, but I think other things would turn out fine.

i started with one of those. they are fantastic !!! depends on your flavor  but to can try wine in the pan . but you should keep the water up .  try and not take the coveroff during the smoking process. charcoal as abase is good . check the coals every hour  and add if needed. there should be a hinged door thatyou can use on the side .  a whole chciken is a long smoke. abrisket is even a longer smoke.  i  add wood chips when i add charcoal . if you use a thermometer  remember to cover it with foil .  it is a great start to smoking.  good luck and i hope this helps. any other questions i will glady try and :chef:  answer them for you !!!

if you dont, the smoke will cover the glass  and you wont be able to read it . :chef: :chef: :chef:

moist sand works great in the water pan,
easy clean up and wont have to worry
bout drippings splashing on the coals.
