Here's one made with ground beef, but you could also use venison or elk. It's from www. cooks.com.

Homemade Summer Sausage

2 pounds ground beef

? teaspoon mustard seed

1 cup water

2 teaspoon liquid smoke

? teaspoon garlic powder

3 tablespoons Morton Tender Quick

1 teaspoon onion powder

To prepare sausage: In bowl, combine ground beef, mustard seed, water, liquid smoke, garlic powder, Morton Tender Quick and onion powder. Mix well. Shape into roll about 2 inches round. Wrap in foil (dull side out). Refrigerate for 24 hours.

To bake sausage: Preheat oven to 325 degrees. With seam side up, poke holes in bottom of foil with toothpick. Put ? inch of water in broiler pan. Place wrapped meat on broiler rack over water. Bake for 90 minutes or until done.

ps  i wouldnt use liquid smoke but smoke it,  never tried
this but looked interesting!
