I just took a class yesterday called Kick Ass BBQ and it was the best thing I've done for a long time. Its run by a guy in White Bear Lake (Ed) at his home. He's been doing classes like this once a month for the last 5 years and Im tellin ya, he knows what he's doing. It was a very casual/relaxing setting, he had about 5 different smokers going, with several different pieces of meat, explains fire management in detail, we do all the food prep, and best of all - we ate like kings !!!  I was so full from lunch, I didn't even eat dinner last night. The class is $75 and then I also bought the dvd and cook book for anohter $30. Seriously, the best money Ive spent in years. I HIGHY recommend this class to everyone.  Here's a link to his web site:

I just talked to Ed (the owner of Kick Ass BBQ) and he said he's got another class coming up on Feb 19.  I plan on going and am bringing my Char Griller.

I bought a "baffle" today for my Char Griller. It's an ordinary smoker (grill and side fire box). I got it at Menards for about $150. Anyway, its difficult to regulate the heat and its always hotter at the end by the firebox. With the baffle ($30 from Calebs Customs) the heat is the same within 5 degrees from one end of the cooking are to the other. This really increases the amount of cooking space due to heat regulation.  Ask any long time smoker - fire/heat regulation is the #1 most important thing.
