Well, I'm 44 and just smoked my first beaver. 
The flavor was a little differant, but the texture was very good.  It was a young beaver so it was very tender.  A lot like deer tender loins.  It was some of the bloodiest red meet I have ever smoked.

I brined it over night in salt/brown sugar/honey.  Smoked it for about 4 hours with apple wood.

My wife refused to eat it. 

I didn't take any pictures as I didn't want any proof.

I will try it again and tweak the process.

It was a young brown beaver.  Hardly an ounce of fat on her.  No fishy taste at all. ;D
