Made some of these yesterday.  Fairly simple.  I used pizza dough that I flattened with a dough roller.  Cut them into pieces for the filling.  I spread some Thousand Island dressing on the dough, added some corned beef, some of my German kraut, and generous amount of shredded swiss cheese and sealed them up as good as I could.

I normally make my own corned beef and this was a last minute request by my wife.  So I bought some Budding corned beef in the thin slices.  Haven't bought any lunch meat in a long time but this works.  The German kraut I make is with bacon.  You can see how I make it on my site below in the Recipe page.  This is the way my mom made it in Germany and I make it to this day.  I also use it as a side for pot roasts, my german gumbo, and on top of my home smoked and fresh sausage.  Here are some pics from yesterday.  good luck.
