Big chuck roast. Injected it again with a concentrate of a bit of water mixed with beef bouillon, onion powder and Worcestershire. Tossed in some carrots, onions, and parslied red taters, good to go.

Man does that look great.   I have a meatloaf ready to put in the oven when the wife gets home.  Almost identical to yours Rebs.  LOL  Didn't have some ingredients so had to improvise.  I had no onioins.  Major sin.  SO:  1 lb beef burger, 1 lb Jimmy Dean sausage, 2 eggs, 1/2 cup Panko regular, shot of Worstershire, 1 pkg Onion soup mix, shot ketchup, pepper.  Will let you know how it turns out.

*NOM*NOM* I'm now convinced......the "injecting" is the key. Third roast on a row I've done like that and it was fall apart no-knife-needed tender. 5 hrs on low in da crack pot and pulled it. You can see the rest of da goodies....
