I haven't spatchcocked a chicken for a long time.  That may be an idea if it is too cold out.  ??? Still thinking.

I've been thinking about sous vide  a turkey breast, adapting a recipe for a clone of Turkey to Go from the fair.  Recipe is for the crock pot  and comes pretty close to what they serve at the fair.

Crock pot turkey breast is pretty good if you have plenty of seasoned (salty) broth with it, otherwise it can be dry and/or bland.

Sous vide for poultry?   :scratch:

I get it that sous vide works really good for beef that you don't want to overcook, but even assuming you brought the turkey breast up to the correct temperature and held it there long enough, what would the meat look like?

But then I googled it, and it doesn't look bad.  They say the meat doesn't dry out.  But you still must have to brown it somehow.

I've been putting turkey breasts in a brine overnight.  Turnes out good every time in the smoker, oven or on the grill on in-direct heat.  I would think the sous vide would keep it moist also and agree on the need for browning after.  good luck.

What kinda brine? How would seasoned chicken broth work?

Spose ya could add some but ours is usually a salt water mix with other stuff sprinkled in. The chicken enchilada bake just hit the oven, man that little can of Embasa chipotle pepper sauce  has a bite that got mixed in.  :happy1:

Tell me when to stop!  Nothing like fresh caught winter walleye coated with Andy's and fried to perfection.
Not sure how much I ate but managed to salvage enough for tomorrow.  I cook enough for three meals,
eat one meal while frying, one after I'm done and put one in the fridge for the next day.

If you have ever had turkey to go at the fair it isn't really browned.  Even a roast turkey has a thin layer of brown skin but the meat isn't seared or anything like beef is. 

And sous vide can hold the meat, chicken or turkey at a temperature like 150 long enough to make it safe, and cooked without getting it up to the temperature where all the juice runs out of it.    With white meat chicken or turkey there is a pretty narrow range of temperature between cooked and all dried out. 

The turkey to go is well seasoned and delicious.  One of my favorite things at the fair.

It's a sandwich.  Big booth right behind the DNR building.  By the "all the milk you can drink for a dime" booth.  Well like a buck or two now..
I think it is run by the Turkey Growers Association

last night I placed some sun fish filet's on a cookie sheet, lightly oil them, placed some cajun seasoning on them with some sliced onion and some tomatoe slices..  darn that turned out good!!!   so I reheated some of them and had them with scrambled eggs this morning!!    darn good breakfast too!!

had them all to myself!!!  she was at home preparing for her daughters baby shower today...  it will be her first grand kid!!  if it helps I told her about them!!!!  and she was jealous for sure!!   but I save some for her, nice guy that I am!!   :rotflmao: :rotflmao: :happy1: :happy1:
