I dunno......basically hamburger taco meat with spicy taco seasoning, dumped in a cup of rice, covered with corn chips and sharp cheddar until melty, then plopped in a flour tortilla with sour cream, onyums, and chopped 'maters. Guess it's a burrito with rice, chips, and cheese built in............

We had ruebens with the lefover Corned Beef from the other day.  I cut the beef 1/4" thick and the wife put lots of Swiss cheese on it.  By the way the other day I baked the corned beef, turned out great.  I wrapped it up in foil which I have never done before. Cook for an hour per pound.  Then I cut the cabbage in 1/2" steaks and put it on a foiled cookie sheet.  Drizzle with olive oil and butter and whatever spices you like.  Added some carrots.  Turned on broiler for last few minutes.  Was great!

Made a great meat loaf last night.  Stuffed it with onions, mushrooms, cheese, and a few green olives.  It was luscious. Had cabbage steaks with it.  Good combo.

Cabbage steaks.  I don't remember where I heard of them first.  We both like cabbage but sometimes I think boiliing them takes all of the good stuff out of the cabbage.  So you just take a cabbage and cut it into 1/2" to 3/4" slices.  Then I cover a cookie sheet with foil.  I then lay the cabbage steaks on the cookie sheet.  I drizzle some olive oil on each one and then I also dab some butter on each one.  Then spice with garlic, salt and pepper, maybe some paprika etc.  Then put them in the oven at 350 for 45 minutes or so until tender.  When almost tender I turn on the broiler and get a nice brown/blackness to the edges.  Thickness you cut them varies the cooking time.  Easy as heck and I also split carrots in half and put them on the pan too.  We have also heated up the leftovers in the microwave and are still great!
