Made some baby back ribs yesterday.  Half with just the rub for my wife and her mom who like to dip the ribs in the sauce and the other for me with sauce already on.  good luck.

RH, what is the spice that you put on your rice? It almost looks like red pepper flakes?

Spiral hams sometimes are better wrapped in foil when you bake them due to they have been sliced.  Less chance of losing the moisture that way.  I have never bought a spiral ham and will not ever.  Not that they are bad, they are good hams.  Just that I can't put it in the smoker the way they are like I would a non sliced ham.  They will dry out some.  good luck.

Sous vide.  You just want to heat them enough to be tasty.   They dry out fast if overcooked.   Oven bag or foil in a very low oven works too.

Well that ham graded a D-. It sucked. Disappointed Easter ham dinner. Gonna be alot of  ham in the next batch of garbanzo beans soup, and I think the sheltie will eat well this week.
