going to follow Barry's lead, make tater salad tomorrow...  haven't decided if I want eggs in it yet...   going to cook the taters with skins on...  then peal them...  looks real easy to do that way..  no peeler that way!!!

Easy way to peal boiled potato’s
•
•   Bring a pot with tight fitting lid of water to a rolling boil.
•   To prepare the potatoes take a very sharp knife and score the potato entirely around the center. With a pair of cooking tongs, place the potatoes into the boiling water and cover with lid. Let simmer for about 15 minutes.
•   Remove potatoes and place into a bowl filled with water and ice. Let them cool to the touch; just a few minutes. Holding the potato in both palms on either end, with thumbs pull away the skin from the center removing all from the potato in 2 pieces. Repeat for all potatoes.

I use at least as many eggs as I do spuds.  The last batch I used 1.5 eggs per spud and I am not putting the yolks in.  I think they thicken the juice too much.  It is the egg whites that are the best part of potato salad.

I am no help when it comes to tater salad ( wife duties here). Tonight's grub was our first jar of canned tomato basil soup with the rustic oven grilled cheese bread, man was that good!!

Mom's always were the best cooks growing up,grandma's even better...

Mom's tater salad was always great, ask her for her recipe when she was still with us,never wrote one down she said just thru it together ,semi veggie tater salad, with mustard and chopped boiled eggs.

Today ole snow makes his with a run to my local kowalskis deli, they have a good starter p salad,"country style" with skin on baby red potatoes diced, chopped celery, chives etc.I'll add chopped eggs, add yellow mustard,a few other ingredients like pickles and pickle juice.Seems letting this salad chill over night always tastes better the next day.

You boyz got me hungry already this morning.
