First of all - all credit to Reinhard! I used the recipe off his page.  Been wanting to make this for a long time and finally got around to doing it.  Ground up a chuck roast I had in the freezer and bought some ground pork shoulder from the local meat market on small business Saturday (would've bought it there anyway).  Mixed it all up on Saturday afternoon and stuffed and smoked it today. Used hickory pellets and put some cherry chips in a the pan to add a little different flavor. I've only tried the unsmoked test patty in the frying pan so far- but that was excellent.  I'm letting one ring chill in the fridge until tomorrow night to try the final product.  The rest went in the freezer; 10lbs made about 12 rings -- and 4 patties with the left-over mix.  I'll let give you all the final verdict tomorrow!

Great looking sausage. 

Although I did learn from one of my books that Kielbasa is just Polish word for sausage, so if you went to a meat market in poland and asked for Kielbasa they would look at you funny and say "what kind".   

Yours looks like the tasty kind...

I read in a book if you go to England and look for a tart, you may get this. Better off to ask for a bag of chips and enjoy yer fries, if yer feeling peckish.  ;)

I just looked it up.

"Kielbasa" is "Kielbasa" in Polish.

"Sausage" is Kielbasa" in Polish.

But none of this is getting me any closer to some kielbasa/sausage/wurst.  Those pictures.

Some Tyroler Wurst, with French or Italian bread would go real good about now.

And "polish" is "polska" in Poland. I just bought some polska kielbasa.....does that mean it's polish sausage sausage???!!   :scratch: :rotflmao:

Back to the real thread....after eating real kielbasa like Thunderlunds, I can't stand this store bought junk. Bought some from the butcher shop, made there. Yuk. Hit another buther. Yuk. All this stuff is so soft, and there's no texture to it. Like eating a danged marshmallow! I may haveta move north closer to all you guys.... ;D

Ya, you could say kielbasa means polish sausage, but as I understand it, Kielbasa is a courser ground sausage in general.  Maybe a little more garlic also.  But you can make it the way you like it and that's what counts.  I do love it courser in a ring.  I have made it both ways and the flavor is the same.  I just love kielbasa and polish sausage.  Garlic is the key and a little red pepper in the batch is even better, but not for everyone.  good luck.
