Hey Del-

I was doing some work at the new finest restaurant in Wayzata MN.  In the kitchen they had multiple sous vide machines.  I asked the French chef about them.  He said its the finest way to make a steak and also for the restaurant business it makes it easier.  Lets see.... we could take his advise or a Union Thug or Retired LEO...no offense fellas but I'm going with the French dude.

grill here too.  just got done putting together the new smoker/pellet grill.  get some pellets and break it in next!!

I have a friend that like's that gizmo, and uses it in the winter mostly.  It's all about personal preference really.  Hard for me to give up grilling and especially the smoker.  While that gizmo can cook a nice steak, it can't give you the flavor of the grill or the smoker.  But I'm sure it does work well for those who use them.  good luck.

Man that charcoal chimney was so unstable.  Lucky he didn't dump everything on the table.  Why not just use a cast iron pan to sear it?  In a resturant I can see why they like it.  It gets the steak to the proper temp and they have the equipment right there to sear it.  Makes sense there and for those that want to do this at home.  On the grill you can do everything on one unit and get more flavor in my opinion.  good luck.

Has anyone ever looked up the defination of sous Vide? Meaning under vacuum/ Great way to cook for best flavor!! We been doin it for years NO we dont have a expensive machine>> Just a electric deep fryer with a decent temp control and a candy therometer to make sure temps are in range.The best fish we make are this way. Remember tho OIL retains heat more consitantly than water.Gotta have a vacuum sealer to do it!!
 We been doing it since vacuum machines came out.Course my Liver an onions are always rare in a castiron fryin pan!!

You have yours ordered up yet gents? Seems like an awful lot of extra steps to prepare a steak. Granted I've never tried it ( that I know of) but over flaming hot coals is tough to beat. Anything else besides fish and noodles this contraption can cook?

Exactly RH! Do what you like. Given the access though to the variety of hardwoods growing on my place plus melding those with some of the finest lamb, pork and beef on the planet, why would there be a flavor advantage to putting it in a warm water bath? Add to that pairing what comes off the grill here with fresh vegetables locally grown or from our garden and I have a difficult time recalling any fancy restaurant meal I would call superior to our own "home cooking" either in flavor or nutritional value. That includes a lot of carnivorous territory covered over the years in places such as KC, St. Louis, Chicago, Indianapolis, Louisville, Nashville, Omaha, Des Moines and the TC. And I always have leftovers to nosh that are a lot of times even better the next day! :happy1:

I think RH hit the nail on the head why restaurants like this process. They can have a bunch of steaks cooked and up to temp and then all they have to do is slap it on the grill to give it some color and their good to go. I can only think that the steak done this way without any coloring marinade would be gray until they brown it at the end.  :puke:
