Finally got the pickled pike done yesterday.  5 pounds of it with some sweet onions in there to keep them company.  The flesh firmed up real well after the 3 day vinegar stay in the fridge.  Mixed up my brine and simmered it for awhile.  Let it cool and then instead of putting it all in jars, I got lazy.  I  rinsed the pike again to get the vinegar off and put the pike chunks in a large plastic container.  Put some onions in there also, and then poured the brine over the fish and onions.  Had to triple my reccipe and it covered everything.  I usually give some away, so now when someone wants some I'll just put some in a mason jar and that's it.  Now I have to wait 7 or 8 days and then start to attack it.  good luck.

Thanks guy's.  When I buy some store pickled herring I eat a jar at a time.  Usually get the stuff from Day fish Co.  Morrey's aint bad either.  But I try to make my own as much as possible.  Personally I think pickled pike is better than pickled herring.  I pickled some smelt a few years ago and they were awesome also, especially since we caught them out of Grindstone and they were bigger than the ones out of the big pond by Duluth.  I just cut them in thirds.  good luck.

Here's something to try.  When the fish is gone put a few hard boiled eggs in the juice for a week.  Yum yum.
Anything that is free is worth saving up for.
