Does anyone know any retail stores that sell maple pellets or maple wood chips in the twin cities? Plenty of places have them online and it seems like Fleet Farm has every type BUT Maple in-store.

I'm making some cured venison breakfast sausage (hopefully this weekend) and would like to smoke with maple for these. no time to ship (and not going to pay for overnight).

Let me know if you know anything.

Fleet farm has maple boards. Be pretty easy to make a board into small pieces.  Just what reboot on the head with it until it is reduced to splinters.

Ace hardware in Burnsville had the small bags of chips, havnt seen the pellets.  The side of my garage is full of silver maple if you want to try some..

I buy Pit Boss pellets at Menards.  I love them and they are 1/2 price of all others, even the online ones.  They may have maple.  I use Hickory for everything.

I hadn't thought about Von Hanson's, that's a good suggestion and I pass on on my way home!  I didn't check Menard's website either, I'll do that.  Not sure I want to buy a maple board and chunk it up - There's lots of different kinds of Maple - I think the Maple they make boards out of might not be the most desirable breed for smoking with.  Plus, who knows, it probably came on a truck stacked under a bunch of green treated pine or something.  I'll stick with the stuff in bags! ;)

If nothing else, I'll use Apple, but want a sweeter wood.  Plus I may throw a little pure Maple syrup in the mix

I just goggled it and both Wally world and home depot have mable chips....   according to the web....

I did too last nite.....But NOT IN STORE.....even checked all the Ace; Lowes, and Nursery stores up in that area.....no Maple in stock.....

Fratalone hardware stores,cabelas....consider chunks rather than chips,soak for a couple hours they will give you longer smoke time than chips will and less time keeping an eye on the smoker.

The city works forestry depts or tree dumps usually have a lot....but they won't be dried out. You could pull an end off one of yer kitchen cupboards and run it up to him.... :rotflmao: :rotflmao:

Stopped at ace ( fratalones) and they had 2 bags of chips, so I scooped em up.... just kidding. Still there 3.99 a bag. I also googled all the silver maple I have and most say it's a lighter smoke so they mix other woods in with it. Most liked using it some didn't. As far as hacking of a limb the greener the better, less soaking.

LOL  I do agree with Del.  I soaked my chips and chunks for years.  Then I realized it made no difference at all.  It took awhile for the moisture to cook away and then they smoked.  Now I just throw them on.  I usually get chunks and split them with a wood chisel to the size I want.  Longer smoke bigger pieces.  Shorter smoke smaller pieces.

Spose you can chop off a fresh limb, put it on a fire along side a dry one and see which one smokes more before catching fire and which one flames up and fizzles out the quickest... go ahead.

Del, your offer was VERY generous, thank you - but I'll probably mix tonight and stuff/smoke tomorrow.  So I'm gonna look around on my way home from work tonight.

As for using green maple branches, I bet that would get really sooty and bitter -

I'll let you know how the Sausage turns out.  There's not much out there for cured breakfast sausage recipes - especially an kind of maple flavored ones (Plan on experimenting with syrup, not relying on the smoke for all the flavor).  But a local shop makes some and it's unreal how good it is.  So I'm determined to figure out my own method.

No I DID stop on my way - AND THAT WAS THE TICKET!  REB FOR THE WIN!!!

Not only did they have maple pellets (and chips), they sell casings by weight and they're the ones they use in back so they should be good quality.  Just ordered enough for a little more than 5-lbs of sausage (just doing a small test batch for now).  I like that option rather than buying a big bag. I don't use them fast enough and haven't had luck saving them and preserving the quality.

I'm generally not a fan of Von Hanson's meats as I think they're a little too commercialized and mass-produced.  But the service was great and they had a bunch of different kinds of wood - as well as different forms (pellets, chips, chunks, etc)
