Start this thread with this.  I made 50 lbs of summer sausage for my daughter this year so far from the small buck she got in Wisconsin last season.  Now for the last thing i ground 10 pounds of a venison pork mix to be stuffed in edibal collegen casings tomorrow and smoked.  I will post as I go along.  good luck.

LPS, I'm using 21mm Collagen edible casings from Fleet Farm. LEM brand.  Stuffing today and in the smoker they go.  good luck.

Well they are almost done.  Planned on smoking them but something comes up at times so the oven it was.  My wife works at home and she had a appointment for a ear check up but couln't make it cause of extra work suddenly so I had to go.  So I used Cody's Snack Stick seasoning for 10 lbs. that I got from Curleys.  I added one tablespoon of crushed pepper flakes, 2 tablespoons of mustard seeds, and of course a good dose of garlic that I get out of a jar [organic yet lol].  2 cups of dry powdered milk and 3 cups of water.  I put the seasoning, cure, flavor enhancer [both come with the seasoning] in the water and mix it up good.  Dump that on the meat and then put the mustard seed, crushed pepper , and dry'd milk on top and mix it good.

Used the collegen casings as I stated before.  Man these were brittle and I had to be carefull with them.  I think I must of had these for a couple of years but they were still in a sealed plastic bag.  I set the oven to 250 and pulled them at 175 internal.  Now they are cooling and I will keep them in the fridge till tomorrow and then vac pac them.  Have to say they are very tasty and even my wife agreed.  will have to make some for us also and order some along with my next order of seasoning.  good luck.

So, just how does it work when you go to your wife's ear check up?  "My wife works at home and she had a appointment for a ear check up but couln't make it cause of extra work suddenly so I had to go."  I guess that means she has to go for your colonoscopy.  :rotflmao:

They sure do lps. We devour the sticks off your website Rh,  I do have a question tho, I also buy lem casings and tge stuffer is made by lem but tge casings hardly fit on the smallest horn so I've been doing what the package says not to.. soak em. That seems to be the only way I can get em on the tube. Any advantage from not soaking vs soaking these little collagen casings??

 :bonk: :bonk: :rotflmao:another senior moment.  I left out my wife had a appointment with her mom [94].  As far as soaking the collagen casings I haven't done that.  But I have never had the problem before.  These I had have been around for awhile.  Normally they work just great.  Threw the left over casings in the garbage.  Next time I will get them right before I make more sticks. good luck.

Looking god RH. Do your casings start falling off of the stick after they have been frozen. Seems like are do. The stick slides right out pretty much when eating them. Same casings you are using.

Yes they do at times.  I'm giving them more time to dry and bloom in the fridge this time.  Maybe that will help.  I used to use sheep casings but got tired of trying to rinse them out being so small.  Last thing I made with sheep casings were wieners for my grandkids.  Took forever rinsing them and putting them on the stuffer tube.  good luck.
