First recipe from the Kutas book.  Got it ground today and will stuff it tomorrow.  Even has milk  and eggs in it.  good luck.

Out of curiosity, do you cook some of the water out of the shrooms, or put them in raw?

Del, I put them in raw.  I do wash them first and let them dry before putting them in the mix.  I normally grind them through along with the meat but I forgot to this time.  That is  why you see the ground mushrooms on top of the mix that I ground separately.  Not a good idea to wash them and then put them in the mix that way for the mushrooms will add some liquid.  To  adjust for that in this 10 pound batch I added 2 cups of dry powdered milk.  That absorbs liquid from the mushrooms and the fat from the pork.  This is a recipe from Rytek Kutas book.  good luck.

Interesting spice also.  Mace, white pepper, nutmeg was part of it.  Tasted a test patty and I liked it.  They are cooking now in the oven.  good luck.

Bobber Kutas had veal and beef also but in this recipe but I went with all pork.  Didn't have any beef and not spending the bucks for veal for sure.  Next time I will do it with some beef [when chucks are on sale] but just pork butts was pretty good by itself.  I use some beef in a lot of the stuff I make.  good luck.

Glenn,  I do all the cooking so it's every day.  Sometimes it's hard to think about the next meal though.  Always looking.  And the sausage comes in between.  good luck.

We ate a couple links for a taste test yesterday[didn't want to eat too many for I was making left over pot roast].  Me my wife and mother in law said it was a keeper.  Nice texture and the cheese was oosing out of the links.  This morning we are having some patties from it.  Had over a pound left in the stuffer at the end that I saved.  Good stuff.  good luck.
