these are my fav tobwork with. cellulose. easy to stuff. ni blowouts. they are the size of a hot dog. so i make 4 ft.ropes. smoke em an eat them asba fat stick or a hot dog. both ends should be tied. and smomed at 180 to 200 no more.

This mornings project.  Curley's Old Fashioned Ring Bologna.  Had extra so we are baking these meatballs and will flash freeze then vac pack in portion sized bags.  You can use a metal mixer with Curley's mixes.  High Mountain which taste great can't be mixed in metal containers. We will smoke the rings tomorrow during the Vikes game!

After we baked the meatballs I tried one and they are great!  Will be nice in sphagetti which is Internationally famous you know.   :sleazy:   :rotflmao: :rotflmao:

Making a variety of sausage, sticks, jerky, and brats from venison is something I always think about and probably should have learned how years ago but it's one thing that just fell through the cracks.  I could have an endless supply of venison so that's not the issue.  Maybe I need to find a friend who does it for shares.   :rotflmao:

Yep, there are (were) some giants on this site that really know what they are doing when it comes to making sausage.  Someday I hope to get serious about making some myself, but for now, too many other irons in the fire.

Our Sausage Kings may scoff at this recommendation, but it is quick and easy without investing in any equipment except a grinder.  It ain't the real McCoy, but it will get your feet wet and you'll be eating sausage tonight.  You can snack on this while you're surfing YouTube for more sophisticated techniques and recipes.
