Not sure about Black Walnut, but I know you can also tap Box Elder which is a Maple relative.

Thought the wife's uncle tapped birch at his place. I'm also surprised the neighbors didn't do any tapping of the silver maples this year, he usually has quite the operation.

My cousins tapped trees a couple days ago. I think all trees have sugar in the sap, maple is one of the highest though. I use to tap silver maple and boxelder. I wonder what walnut syrup would taste like.

100 gallons of sap will give you 2.75 gallons of syrup. That's a lot of boiling. My brothers trees average 2.4% sugar. Sap doesn't become syrup until it is 67% or above sugar. A lot of work. Must be why it is expensive.

from what i read the black walnut, its the color and a bit different flavor. sounds like its more common the further south you go as there are more black walnut trees.

there are black walnuts around here but not many, as i have one so did my parents. this is about as far north as they go.
