 I use a home made meat rub and inject itailan dressing  into the breasts

 I just put the bird in a pan  , stuff the fella ,  pack mushrooms around the sides of the bird in the pan, put a half of bottle of red wine  and cook on the weber indirect for as long as it takes. i add charcoal as needed  and add hickory chunks  soaked in water  on the coals  every half hour  or as needed. 
  I will try your idea on a smaller bird . it sounds good !! thank you for posting it !

i smoke it right on the rack, turkey will only
take so much smoke, them i finish it off
in the turkey fryer. i like to be safe and fry
to 180, then cover with foil for 10 minutes or
so.
