ok, city chicken is a popular dish around these parts. It is cubes of pork and veal, breaded and baked. I use boneless Country ribs and veal, alternating each piece,  bread with Italian bread crumbs brown in a skillet with oil then bake at 375 for about an hour. If you google it it'll give the whole story on city chicken. If you want to do the poor mans city chicken you can just use all country style ribs.

My rib didn't turn out too bad. Pulled it out at 140 degrees internal and it was done medium. Didn't have any complaints and everyone seemed to like it. I thought the butter-garlic seasoning was good also. The next one will be coming out at 134 degrees no matter what the timer says. I likes my rib a bit on the bloody side. Hope everyone had a great weekend, I did.
