I just watched the vid on the ham, I dont know bout that one,  a ham on the grill over charcoal and a bit more hickory is tough to beat. I usually yank em a little over 140, I didn't see much for juicey ham until he got towards the middle, the rest looked dry. Although the extra crunch would be interesting..
