Merry Christmas to all, it's my year to cook and I have to work tomorrow at the shop so today is getting everything ready. Menu is buffalo chicken dip, sweet pea dip, refried bean dip, kielbasa in maple syrup, seafood bisque, chips, cookies and for the main course.... city chicken,  garlic mashed red potatoes and creamed peas. Y'all have a safe and happy Christmas

OK Coffee, what is city chicken???  one you raised in town??? :rotflmao: :rotflmao:

Old school, sort of.  Sear at the end.   Salted overnight. 225 for long time until 125 degrees then crank oven to sear.

I am wondering what city chicken is too.  And did it cross the street?   :rotflmao: :rotflmao:  I have the two lobsters in the frig thawing out.  I got the two biggest ones they had at the meat market here.   :sleazy:  I think we will steam them.  Got some asparagus to go with them.  Not sure what the wife is going to add to the spread.  I even thought about baking the lobsters.  Have never done that.  The tails are about 18 oz ea.

Just ran across this, one of my best Christmases....think it was 2006. Ice fishing on a snowy Christmas day with my cuz on Pokegama. Caught a zillion perch and lotsa snot-rockets. They were following the schools of perch around...
