i really enjoy curleys recipes. this is old.fashioned weiners, i decide to put them in hog casings instead. braut style. if youve never tried curlys old fashioned wei er sausage. yku should, some of the hest flavor ive ever had. to rounds of smoke, whisky barrel and apple. phenominal. coffie some is come ur way to settle your win on the last challenge

  I gots teriyaki for sticks ( which were done today) dog is on my lap or I'd take a pic, chili dog, formed bacon and jalapeƱo summer snausage seasoning.  How's the rest?

ive never had either of those. but what id do with the summer sausage is follow.rieny suggestions on his web site. if its  25 lb seasoning batch, myself would add for every cup.of water id add a cup of powerd milk, its a binder and helps keep.moister in the meat, use flavor. i do this with all my sausage. you can cunsult reiny on this.

Can't wait, looks good  hubba_hubba-404.gif burp-402.gif. Your coffee will be up very soon, I got delayed doing end of year taxes. We went with a different CPA and what a mess. He is one of those guys that don't want to talk on the phone or face to face, everything has to be either a text or email.  :bs:

  I think you should try some, most of RHs sausage recipes calls for  bacon formed seasoning, I'm well aware of powdered milk.

cool beans! have fun,  i like to break down the kits. the ol dashioned weiner was a 25 lb batch kit, i took out my scale.and devide it into two batches. alot easier to handle.and much les.time.

I've been dividing them in half too.  I have the old fashioned wiener kit but haven't made them yet.  Did you use a combination of pork and beef Jeff?  Let me know how they tasted and what type of meat you used.

I just got my stuff in also.  Polish, Old Fashion wieners [I use hog casings also], Ring Bologna [great flavor also], and a new one for me to try Apple Brats which I will be making fresh.  Bobber the formed bacon season is one I use for summer sausage and then add stuff to it to make different types like jalapeno summer or cheese summer for example but I don't use it for any other type of sausage.  Boar those old fashion look great and with cheese.  That is what is fun about having these seasonings.  You can use the seasoning by itself or add stuff to your liking like cheese hot peppers ect.  Do it all the time.  good luck.

I will be stuffing my Curleys Old Fashioned Wieners today.  Also in hog casings.  Added cheese and mustard seeds.  Did all beef.

Sounds great LPS.  I did a small batch of curlys chili brats yesterday, the fry test was tasty but I froze em for later. :happy1:
